This professional dough conditioner makes approximately 48 loaves.
Dough conditioner (or dough enhancer) is indispensable to the baking of great breads. Use this conditioner for all of yeast baking--pastries and breads. It is a commercial product and the same conditioner that we use in our mixes. It creates an enhanced environment for the growth of yeast helping to make your breads and pastries more uniform and lighter. It also strengthens the gluten structure in the dough to create a better crumb to your loaves. This dough conditioner also retards staling and helps your bread stay fresher longer.

I use dough conditioner, also called whole grain dough/bread improver and dough enhancer, in every loaf I make with whole grain flour. The King Arthur Flour website is full of tips like this that helped me get my efforts off the ground when I began baking all our own bread a little over a year ago. We're slowly overcoming bad habits and the kids' taste buds having gotten used to what I call "air bread," that tasteless stuff from the grocery store with no character and low nutrition (plus too many chemicals).
These amendments, as they are called, help turn out nice loaves instead of bricks and door stops! It has also been worth my money and investment into whole grains and good nutrition to use baker's special dry milk that is heat-treated to inactivate the enzymes that fight yeast's rising action. I also use a scant tablespoon of potato flour per cup of any sort of wheat flour (improves moistness and extends freshness).
Try this and the other items I mentioned -- your family is worth it! Depending on how much bread you zip through, a bag of this can last you a while. As with a number of ingredients, we keep ours in the freezer to preserve it. Salut!

Using the french bread recipe for my breadmaker, the loaves would only come to about 2/3's the way up the pan. Since using this product the loaves are full to the top and much fluffier and tasty crunchy crust. I've made 3 loaves so far all are much better. And the beauty is that it only takes a half teaspoon per loaf so the bag should last almost forever. The loaves seem to stay fresher longer as well. I recommend this product from this seller who got it out to me in only a couple of days.

By Trina Boice I have friends who use this dough conditioner who absolutely love it and insist that it makes a difference in their bread, so I wanted to try it. The quality appears to be good and my bread does seem bigger and fluffier when I use this.
Because I'm a dough conditioner newbie, I would have loved to have some recipes, tips and more instructions included with this purchase.
