By Phillip Ruffin If you want to make fruit tarts (or German "torts"), this is the glaze to get. My German friend says the "torts" are very common in Germany, like apple pie in the states. For first time success, put the sugar in a dry saucepan and mix the glaze powder thoroughly with it before adding the water. I use 1/4 cup sugar instead of the tablespoon indicated on the package. Pour the glaze quickly after cooking, with a small stream aimed at each piece of fruit to cover all of them completely. Don't plan to keep these long. The fruit colors bleed into the glaze over a couple of days, so they look much better soon after completion. Refrigeration is nice, but unnecessary. Good stuff!
